Kleistang, (or anyone), is there any way to fit that GT500 supercharger and pulley onto a GT? Would I need a new manifold, heads, etc? Is there an adapter perhaps for it?

yes and no, you will need a bracket to fit on the gt i think its a TVS one, but by the time you get that and other things you need, might as well and save up and buy a new or used one.
